Creamy pasta sauce without substitute products

You love oven vegetables and could eat them practically every day?
But sometimes you want a bit of a change? Then this recipe for our creamy oven veggies pasta might be just the thing!

This creamy and vegan sauce is easy to make. Because the oven and mixer do most of the work for you. We also added good protein and fiber to the sauce with the white beans.

How to make the oven veggies pasta:


You only need a few ingredients and you can basically vary the vegetables with what you have at home and what maybe just has to go. Perfect for using up leftover vegetables.

First, preheat the oven to 180°C. Then the vegetables are washed and cut into large pieces. First peel the onion and garlic.

Then everything is placed in a casserole dish or on a baking sheet and mixed with oil, thyme and salt.
The oven vegetables are then baked for about 20 minutes.
In the meantime, you can cook the noodles according to package directions.

After the oven vegetables are ready, they are placed in a good blender along with the canned white beans and blended into a wonderfully creamy sauce. All you have to do is taste the sauce and you can pour it over your hot pasta and enjoy the finished oven veggies pasta!

A little hint:

You can also add yeast flakes to the sauce for a cheesy touch. And if the sauce is too thick, you can thin it out with some cooking water from the pasta.

Ingredients

  • 100 g of peppers
  • 100 g of zucchini
  • 80 g of tomatoes
  • 1 onion
  • 1 clove of garlic
  • 2 tbsp olive oil
  • 1 tsp thyme
  • ½ tsp salt
  • 200 g of pasta
  • 70 g of white beans

Instructions

  • Preheat the oven to 180°C circulating air.
  • Wash the peppers, courgettes and tomatoes, cut into large pieces and place in a casserole dish or on a baking sheet.
  • Peel the onion and garlic and cut into large pieces or rings.
  • Add both to the casserole dish.
  • Scatter over the olive oil, thyme and salt and mix well.
  • Put everything in the oven and bake for 20-25 minutes. The vegetables should be soft, but not too dark or dry.
  • Meanwhile, cook the noodles according to package directions.
  • Prepare a blender and add the oven vegetables after the cooking time. Add the white beans and mix well to form a creamy sauce. Season to taste and pour the sauce over the cooked pasta and enjoy!
