Vegan Cherry Galette

Maybe you’ve already come across one or the other galette recipe.

We already have a plum galette, a Strawberry galette, but also savory variants like our Forest Mushroom Galette featured. Last but not least, our tomato galette is a great, aromatic dish with the fresh basil in combination with the olive oil.
In view of a full hanging cherry tree at Malgosia’s family, we were almost forced to pack part of this year’s cherry harvest into a vegan cherry galette.

And guess how it turned out! -Great, of course ūüėČ
Our vegan cherry galette consists of an easy-to-knead shortcrust pastry and a filling of fresh cherries. It takes some work to remove the pits from the cherries before filling the galette with them, but it’s worth it!

The vegan cherry galette is a super easy-to-make pastry for every occasion.
It’s also perfect that you can vary the fruit! Not enough cherries left? -No problem, just add some apple wedges to your galette! But peaches or plums also look good on a galette!

The only difficulty with shortcrust pastry is not to knead the dough for too long. Otherwise it becomes rubbery and cannot be processed so well. After baking, it doesn’t have that great consistency anymore. With shortcrust pastry, you can generally remember that unlike yeast dough, it does NOT like to be kneaded for a long time! Did you knead the ingredients into a homogeneous, firm dough? -Perfect, don’t keep kneading! Now just put it in the fridge covered and let it recover from the hardships of kneading! This way, your vegan cherry galette will end up with a great, tender, crunchy base!

The base or the edge that your vegan cherry galette will later have will be particularly crispy and nicely browned if you brush it with some plant drink beforehand. This even has two advantages! The dough gets a great color, but the flaked almonds that are spread on it also stick nicely! Very practical and just looks even better with almonds! If you are allergic to nuts, you can of course simply leave out the almonds!

Cherry pitting trick:

If you want to make pitting cherries a little easier without having to buy fancy tools, we have a trick for you!
Get a bottle with a regular sized bottle opening. E.g. from a water bottle. Then you wash the cherries and remove the stalk. Now you take a wooden skewer or one made of metal. Place the cherry on the neck of the bottle and use the skewer to push the stone into the bottle. The fruit stays on top of the bottle and the pit falls into the bottle! Now you have your pitted cherries ready for the galette in no time at all! -Of course, this also works for other uses of your cherries ūüėČ

Ingredients
  

shortcrust pastry:

  • 230 g spelled flour type 630
  • 2 tbsp sugar
  • 8 g of vanilla sugar
  • 130 g cold vegan butter

Filling:

  • 400 grams of cherries
  • 1 tbsp cornstarch (if necessary)

Glaze:

  • 2 tbsp plant drink
  • 2 tbsp sliced ‚Äč‚Äčalmonds

Instructions
 

  • In a bowl mix the flour with sugar and vanilla sugar. Cut the cold butter into cubes and add to the flour-sugar mixture.
  • Rub the butter with the flour and sugar with your fingers until crumbly.
  • Add 3 tablespoons of cold water, tablespoon at a time, to the bowl and quickly knead into a smooth, firm dough. Depending on the flour used, less water may be enough.
  • Place the dough in a closed container in the fridge for 30 minutes.
  • Meanwhile, pit the cherries. If they are very juicy, stir in the cornstarch so that not too much liquid escapes during baking.
  • Preheat the oven to 180¬įC.
  • After 30 minutes, take the dough out of the fridge, roll it out to a thickness of 2 mm on a floured surface and spread the cherries on it. Leave an approx. 5 cm wide border free all around.
  • Fold the edge over the cherries, brush with a little plant-based drink and spread the sliced ‚Äč‚Äčalmonds over the edge.
  • Now bake the galette for a total of 40-45 minutes on the middle rack until the edges and the almonds are slightly coloured.
  • If you like, you can dust the galette with some powdered sugar after baking.

Notes

For nut allergy sufferers, simply leave out the almonds for the rim!
